This spinach, broccoli and apple soup is another perfect way to get your greens in during the cooler months.
With the second wave of corona here and the temperature dropping, it’s time to pay extra attention to our vitamin intake. We’ve had a corona scare in our household but luckily the test results were negative. But it was more reason for us to kick things up a notch with our health.
I have discovered new hobbies since the start of corona. And as positive as that may be, I have been taking less care of myself. A few months later and a kilogram or two heavier, I feel like it’s time to slow down. And just check in on my health because too much of a good thing can sometimes be bad.
Whenever I feel like I need a kickstart, I refer back to Dr. Mike Dow’s book – The Brain fog fix. In there, is a three week programme that helps beat brain fog and fatigue. Not only does it help you reset your body but also mentally too. I find the first 2 weeks easy but the last week with regards to electronics, more challenging.
Week one basically focusses on cutting out certain foods and incorporating a certain amounts of veggies in your daily intake. The part that I like! I am by no means a vegetarian but I do love veggies. I just feel like I am not get enough in on a daily. And this programme is a great reminder to do so and actually calculate your daily portions.

A healthy green soup with spinach, broccoli, leeks and apples. 1. Melt butter in a pot and fry the leeks until soft. 2. Add apples, broccoli and spinach and fry for 5 minutes with the lid on. 3. Add broth, season with salt, pepper and nutmeg and simmer for 20 minutes. 4. Garnish with chilli, spring onions, sunflower seeds and lemon wedges.
