Do you realise that is it almost Corona’s bday?! Are we ever getting out of this? 🤦🏽‍♀️
Well, guess it’s not too bad being in lockdown with todays crazy weather! 🌧 It’s definitely a soup kinda day.

We’ve decided to have our @hellofreshnl dinner for lunch. A #sweetpotatosoup with red bell pepper. I’ve opted to roast the veggies first cause I like being extra 😜

These Potato Goat's Cheese Balls made from @bettinegeitenkaas are a must try! Crispy on the outside, fluffy on the inside with a whiff of cheese when you open it. It was gone in no time! The perfect snack at your next party or simply enjoy at any occasion. Recipe below or check out the video under my Reels section.

𝗣𝗼𝘁𝗮𝘁𝗼 𝗚𝗼𝗮𝘁'𝘀 𝗖𝗵𝗲𝗲𝘀𝗲 𝗕𝗮𝗹𝗹𝘀
Easy - Makes 12-15

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
- 400g potatoes
- 1 tbsp butter
- 100g Bettine Goat's Cheese
- 10g parsley
- 5g chilli flakes
- 5g salt
- 20g maizena
- breadcrumbs
- 500ml oil

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀
- Peel the potatoes, cut in cubes and boil until tender.
- Remove from heat and drain the water.
- Add butter, followed by goat's cheese, parsley, chilli flakes, salt and maizena.
- Stir / mash it and mix thoroughly.
- Use a tablespoon to scoop from the mixture and roll into balls.
- Roll the balls in breadcrumbs to cover completely.
- Heat the oil and fry the balls for 5 minutes or until golden brown.
Serve with chilli sauce.

Happy New Year everyone! I'm back from a lovely break and looking forward to sharing recipes again. I got to try various goat's cheese from @bettinegeitenkaas I have a weak spot for cheese, so I was happy to come up with some recipes like this one.

𝗦𝘁𝘂𝗳𝗳𝗲𝗱 𝗥𝗼𝗮𝘀𝘁𝗲𝗱 𝗕𝘂𝘁𝘁𝗲𝗿𝗻𝘂𝘁 𝘄𝗶𝘁𝗵 𝗤𝘂𝗶𝗻𝗼𝗮 𝗮𝗻𝗱 𝗚𝗼𝗮𝘁'𝘀 𝗖𝗵𝗲𝗲𝘀𝗲

Easy - Serves 4

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
• 2 Butternut Squash, halved
• 2 tbsp olive oil
• 150g Quinoa
• 300ml water
• 50g walnuts
• 50g cranberries
• 50g dried apricots
• 200g Bettine Goat's Cheese Pearls
• 1 tbsp maple syrup

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀
• Preheat the oven to 220C.
• Slice butternuts in halve. Remove the seeds, drizzle with oil and season with salt.
• Bake for 50 – 55 minutes until butternut is soft.
• Rinse the quinoa thoroughly under water.
• Add water and quinoa to a pan and bring to boil while stirring.
• Cook for 10minutes. Remove from the heat and let it steam for another 10minutes with the lid on.
• Chop walnuts, cranberries and apricots in smaller pieces and add to quinoa.
• Stir in the goat's cheese.
• Remove the butternut from oven. Allow to cool and then scoop out the flesh.
• Lower the heat of the oven to 180C.
• Fill the empty butternuts with 1/3 of the butternut flesh and top with quinoa mixture.
• Drizzle with maple syrup, return to the oven and bake for another 10 minutes.
• Serve with a green salad.

• Whip up meringue in different sizes to create layers for the Xmas tree. 🎄
• Layer with whipped cream and decorate with fruit. And you have an easy showstopper of a dessert 😉

Easy to whip up:

- Simply arrange rosemary in a round shape.
- Decorate with edibles. I’ve used olives, nuts, @looyekwekers honey tomatoes, @oldamsterdam_nl cheese blocks, radish, fuet & @bettinegeitenkaas goat’s cheese pearls. Drizzle with a bit of olive oil. 🥂

5Dec ... the birthday of Sinterklaas (not Santa Claus) #dutchtradition

So Sinterklaas arrives in Holland 2 weeks before his bday on a boat with his horse & helpers. From that moment, kids will put their shoe every evening at the fireplace with a wishlist & carrot 🥕 for the horse, in the hopes of getting a gift 🎁 in exchange the next morning. (Quite a chore if you’re a parent) 😀
Families would draw names & buy gifts for each other, along with a poem & do the exchange on Sinterklaas bday - 5Dec. He returns back to Spain again that day. To all celebrating in Holland today .... “Fijne Pakjesavond!” 🎁

So for todays #pakjesavondchallenge I made a brownie cake from @droetkerbakken_nl & decorated it with all Sinterklaas candies. The idea I got from bakken.nl
